Flaxseed keto tortilla (no eggs)

Tortillas are sometimes called Mexican pancakes, or tortillas. This dish is no more difficult to prepare than regular pancakes. The only difference is in the way the pancakes are formed: the tortillas need to be rolled out by hand.

  1. In a bowl, combine all dry ingredients.
  2. Add hot water and stir.
  3. Once the flour has absorbed moisture, mold a dough ball.
  4. Place the dough in the refrigerator for about 30 minutes to cool well.
  5. After 30 minutes, the tortillas can be formed. Using parchment paper, roll out the dough with a rolling pin.
  6. Then, use a small saucepan lid to cut out the tortilla.
  7. Fold the remaining dough together and repeat rolling and slicing until the dough is finished. The dough should be enough for 4 tortillas that fit in your hand.
  8. Preheat a pancake or nonstick skillet, brush the skillet with coconut oil (or olive oil).
  9. Cook the tortillas over medium heat for about 3 minutes on each side.
  10. Serve with any toppings.
