First prepare the dressing. Grind the egg yolks or finely grated egg, add salt, pepper, crushed garlic and, little by little, add oil, stirring constantly. Pour in the lemon juice and beat the mass. With yolks, the mass will have the consistency of a cream. This is not possible with proteins.
Wash lettuce leaves and pat dry. It is advisable to hold the leaves in cold water with ice for some time before this. Then they will be crispy.
Leave small leaves as they are, and tear large leaves into pieces.
Drizzle dressing over salad before serving, toss to combine.
