  1. Rinse and dry the onion.
  2. If desired, instead of lightly salted cucumbers and green onions, you can use the more familiar pickled cucumbers and onions.
  3. Finely chop the green onion together with the white part.
  4. Cut lightly salted cucumbers into thin slices.
  5. Heat vegetable oil in a frying pan. Stirring constantly, fry the green onions over medium heat for about 3 minutes, until golden brown.
  6. Add cucumbers to the onion, reduce heat to low and, stirring occasionally, fry for about 3 minutes.
  7. Break eggs into a frying pan
  8. Sprinkle with black pepper. I didn’t salt because the cucumbers already contain salt.
  9. Cook the eggs over low heat for about 4-5 minutes, until the whites curl.
  10. Unusual scrambled eggs with lightly salted cucumbers and green onions are ready.
