I make frittata out of everything I find in the fridge. The simplest one, in my opinion, is frittata with sausage and tomatoes.

Ingredients

  1. Cut the cherry tomatoes into halves.
  2. In a frying pan with a removable handle in heated vegetable oil, fry the sausage on both sides until golden brown. And then place about half of the tomatoes, skin side up, between the sausage slices. Cook for 3 minutes.
  3. Chop the parsley finely.
  4. Beat the eggs lightly, add salt and pepper.
  5. Pour the beaten eggs over the sausage with tomatoes.
  6. Top with the remaining tomatoes, slices up. Sprinkle with parsley. Place the frittate skillet in an oven preheated to 180 degrees for 10-12 minutes.
  7. Frittata with sausage and tomatoes is ready.
