  1. Heat olive oil in a heat-resistant skillet. Sear the onion lightly, stirring occasionally (only until soft). Whisk eggs with salt and pepper. Put ham, peas, pasta and grated cheese in a pan with onions. Pour over eggs, reduce heat to low and cook for 6-8 minutes, stirring occasionally, so that the eggs “grab” evenly.
  2. Place the skillet under a preheated grill to medium heat. Bake for 3-4 minutes until golden brown. Chill slightly, slice and serve with sauce.
