The recipe for such a cake is specially designed for those who monitor the level of sugar in the body (for diabetics). Try a simple fructose cake recipe. It turns out to be very tasty.

  1. Divide the eggs into whites and yolks, which are placed in separate bowls. Important: both bowls must be completely clean and dry. Send half a glass of fructose to the yolks and beat with a mixer until the mass lightens and increases in volume.
  2. This is how the yolk mass should turn out.
  3. Now sift the flour mixed with baking powder (1 tablespoon each) into the yolk mass and gently stir in it with a spatula. When all the flour is mixed in, the mass will turn out to be quite thick.
  4. Mix the proteins with the second half glass of fructose and beat with a mixer until hot peaks. Beat is necessary, starting at low turns and gradually increasing the speed.
  5. The whites are beaten, the mass is white, dense and keeps its shape well.
  6. Now gently mix the whites into the yolk mass. Move the paddle in one direction as if lifting a mass from the bottom.
  7. Line a baking dish (my dish is 26 cm in diameter) with a circle of parchment. Pour the dough and flatten. Send to the oven, preheated to 170 degrees, for 20-25 minutes (it all depends on your oven).
  8. In the meantime, prepare sour cream. You can take sour cream of any fat content. I will tell you how to make the perfect sour cream even with 15% sour cream without using thickeners! Simply transfer the sour cream to a colander lined with several layers of gauze and refrigerate for 2 hours. You will see how much liquid will leave the sour cream! Now add fructose (the amount depends on how sour the sour cream is, I always add ½ cup first, and then add more if necessary). Beat the cream with a mixer until the fructose dissolves and the cream turns into a homogeneous smooth mass.
  9. The biscuit is baked. Cut it in half lengthwise. Using a leather or serving ring, cut a 20 cm circle out of the bottom cake layer. This will be the base of the cake. Tear or cut the remaining pieces and the top cake into pieces. Grease the base of the cake with sour cream. And then dip the rest of the dough in the remaining cream. Place these pieces on a slide-up base. Lubricate the top with the rest of the cream.
  10. Decorate the cake as desired. Any fruit, chocolate chips, confectionery powder will serve here.
  11. Let the cake soak in the fridge for 2 hours and serve. Enjoy your tea!
