Green Peas, Beans and Feta Salad

This salad, if desired, can also become lean - you just need to replace the cheese with tofu bean curd, best of all soft, the so-called "silk".

  1. Boil the peas and beans in plenty of boiling salted water, 5 minutes, drain and rinse the vegetables under cold running water to stop cooking. Dry.
  2. Finely chop the green onion, cut off the leaves from the mint and chop too.
  3. For the dressing, combine lemon juice, zest and olive oil. Whisk until emulsified and season with salt and pepper.
  4. In a large salad bowl, stir together the beans, peas, onions, and mint. Drizzle with dressing. Sprinkle with crumbled feta. Serve with a baguette.
