Green Caper Salad is an easy-to-prepare and calorie-friendly salad that is good for a light snack. A simple recipe for green salad with capers will appeal to "herbivores".

  1. Peel the zucchini, cut into thin slices, each slice into 4 more pieces.
  2. Put the zucchini slices in a preheated pan with a little oil, fry for 4-5 minutes over medium heat until the zucchini is soft.
  3. Cut the leek into thin rings, put it in a salad bowl.
  4. Add thinly chopped celery stalks there.
  5. Wash the arugula and add to the salad without chopping.
  6. When the zucchini has cooled slightly (at least to room temperature), add them to the salad bowl.
  7. Finally, add the capers along with a little brine. Stir the salad, you do not need to season with anything - enough brine and olive oil from the zucchini.
