Green Salad with Fried Fennel and Strawberries

The combination of green salad with aniseed notes of fennel and sweet and sour strawberries gives an amazing effect.

Ingredients

  1. Remove the base and stems from the fennel and leave the greens for decoration. Cut the fennel into very thin slices.
  2. Cut the fennel into very thin slices.
  3. Heat some butter in a frying pan, add a little salt and add the fennel. Fry, stirring occasionally, for 2 minutes. Transfer to a plate and cool.
  4. In the same skillet, fry the nuts and seeds, 1 min. Transfer to a plate.
  5. Chop strawberries thinly and pepper. For dressing, mix orange juice with zest, salt, pepper and a couple of tablespoons of pumpkin seed oil.
  6. Mix lettuce leaves with fennel and 1 tsp. dressings, place on plates. Top with strawberries, pour with dressing, sprinkle with seeds, garnish with fennel greens.
