  1. Wash and dry the meat with a paper towel.
  2. Cut garlic cloves lengthwise into 2-3 slices
  3. Cut carrots into small pieces. Make incisions in the meat with a knife (at a distance of 2 cm from each other) stuffed with garlic and carrots. Lubricate with a mixture of spices, mustard and salt - leave to marinate at room temperature for 3 hours. We take 2 sleeves for roasting (one in one - a double sleeve turns out) we place meat and having let out air we tie tightly. In a large saucepan with cold water put a bag of meat and cook for 1 hour. After boiling the water, reduce the heat. At the end of the hour, take the package out of the pan and transfer to a baking dish. Carefully cut (so as not to burn your hand with steam) and bake in the oven at 180 degrees for 15 minutes until ruddy crust. After cooling, put in the refrigerator.
