Iranian beetroot salad

This beetroot salad with yogurt dressing is very popular in Persian cooking.

Ingredients

  1. Clean the beets.
  2. Onion cut into half rings.
  3. Put the onion in a deep bowl, add the lemon juice.
  4. Finely chop the mint leaves.
  5. Add salt, pepper, sumac, and mint to the onion. If desired, you can add hot pepper. Stir in the onion and let it marinate for a couple of minutes.
  6. Grate the beets on a coarse grater.
  7. Season the beets with natural yogurt, salt, pepper a little, mix.
  8. Arrange the beetroot in a serving dish, top with the pickled onion.
