  1. Peel half of the skin off the cucumber, as shown in the photo. Cut in half lengthwise; scrub the seeds with a spoon. Use a peeler to cut the cucumbers into very thin slices. Place in a double layer of paper towel and squeeze gently to remove excess moisture.
  2. Combine vinegar, sugar, and salt in a medium bowl and stir to combine. Add cucumbers and sesame seeds. Serve immediately.
