These almond flour buns are great for burgers. The cheese in this recipe helps achieve a bread-like texture. With the help of mozzarella, the buns acquire a soft center, but do not have a pronounced cheesy taste.

  1. Preheat oven to 200 C.
  2. Line a baking sheet with parchment paper and brush with olive oil.
  3. In a microwave-safe bowl, heat the cream cheese several times for 20 seconds, until you can easily stir it.
  4. Add chopped mozzarella and stir. The cream cheese should be warm enough to mix well.
  5. Add chicken eggs to cheese mixture and stir.
  6. In a separate bowl, combine almond flour, baking powder and salt with a fork until no lumps remain.
  7. Gradually add this dry mixture to the cheese mixture and stir.
  8. Grease your hands and divide the dough into 12 pieces. Roll the blanks into balls and form flat disc-shaped buns.
  9. Place the buns on a parchment-lined baking sheet. Leave enough space between the buns to prevent them from sticking together during baking.
  10. Brush the tops with butter and sprinkle with poppy seeds (or toasted sesame seeds).
  11. Bake until golden brown, 15-18 minutes.
  12. Tip: The baking time depends on the oven, but do not keep the buns in the oven for more than 20-22 minutes. The almond flour should not look burnt, this will affect the taste of the buns.
