Keto mascarpone candy is a fat-rich, low-carb treat that resembles dark chocolate-covered creamy truffles. The recipe is for 28 servings. One serving of these sweets contains less than 1 gram of carbohydrates.

  1. Combine softened coconut oil, mascarpone cheese, and powdered sweetener in a saucepan over low heat.
  2. Remove from heat, stir in whey protein and vanilla extract.
  3. Using an electric mixer, beat the filling until smooth.
  4. Form balls from the finished mass and place them on a flat dish with parchment. You should get 28 small candy blanks. Refrigerate for several hours to chill.
  5. Melt the chocolate, cocoa butter and powdered sweetener in a steam bath until completely melted.
  6. Remove chocolate mixture from heat, add stevia powder and vanilla extract.
  7. Dip the chilled balls into the chocolate and place on a flat dish to harden. Garnish with additional melted chocolate if desired.
  8. Store candy in the refrigerator.
