Keto cinnamon buns

These keto cinnamon buns are made with no sugar, dairy or gluten. One serving contains 2 grams of net carbs.

Ingredients

Directions

  1. Preheat oven to 180C. Lightly oil a baking dish, or place oiled parchment paper in the dish.
  2. In a bowl, combine almond flour, tapioca flour, salt and baking soda.
  3. In a separate bowl, combine coconut oil, eggs, vanilla extract, and maple syrup.
  4. Mix dry and wet ingredients together.
  5. Form a ball of dough, refrigerate for 10 minutes.
  6. Place a piece of parchment paper on your kitchen counter, sprinkle with almond flour, and place a ball of dough on top of it. Sprinkle flour on top, then place a second sheet of parchment paper on top. Using a rolling pin, roll out the dough to a rectangular shape, about 1.2-1.5 cm thick.
  7. Brush a sheet of dough with coconut oil, sprinkle with cinnamon and sweetener.
  8. Roll the dough gently on parchment paper to form a long roll.
  9. Place the dough in the refrigerator for a few minutes while the oven preheats.
  10. Cut the roll into individual buns and place them on a baking dish (should make 15 servings). Place the buns next to each other. This will help maintain its shape during the baking process.
  11. Bake for 20-25 minutes or until golden brown.
  12. Remove the buns from the oven and cool for a few minutes before adding the frosting.
  13. You can use the icing to your liking, which is why the nutritional information includes non-icing data.
  14. Some examples of bun icing:
  15. - powdered sweetener + nut milk (beat in a blender),
  16. - melted coconut oil,
  17. - 1.5 cups cashews, 1/4 cup sugar-free maple syrup, 1/2 tablespoon apple cider vinegar, 1/2 teaspoon lemon juice, 1-2 tablespoons vegetable milk (whisk in a blender).
