Keto mayonnaise is made from olive oil without added sugar or sweeteners. This sauce consists of farm eggs (yolks) without thickeners, flavors and monosodium glutamate.

  1. Prepare the indicated ingredients.
  2. Divide the chicken eggs carefully into yolks and whites. Place the yolks in the bowl of a food processor or blender. Add salt. Use farm eggs, the mayonnaise will be more colorful and vibrant.
  3. Whisk at the highest speed of a food processor, blender or mixer for at least 3-5 minutes until whitening. If the yolk mass does not turn white, then oil will not interfere with it.
  4. Start pouring in the olive oil little by little. It is best to purchase cold-pressed oil - the sauce will turn out to be of higher quality, healthier. Do not pour in all the oil at once - the mayonnaise will exfoliate. Patience is important here, but do not slow down the speed. At the very end, pour in lemon juice, beat for a couple of seconds and turn off the technique.
  5. Place cooked sauce in a jar or container, refrigerate and serve.
