Our low carb version of moussaka is juicy, cheesy, with vegetables, quick and easy to make!

  2. Cut the eggplants into small 1 x 1 cm cubes, no need to peel them. In a large skillet, fry the eggplants in olive oil over medium heat. Add salt and pepper
  3. Add chopped onions, garlic and spices. Fry for a few minutes until the onions and eggplants begin to soften and color.
  4. Add minced meat and fry until tender. Pour in the tomato sauce and simmer for a few minutes.
  5. In a saucepan, combine the ingredients for the cheese sauce - leave half of the cheese to powder on top! Let it simmer for a few minutes until the sauce thickens. Add ground nutmeg, if using, and stir well.
  6. Transfer the meat to a large baking dish or several small ones. Pour the sauce over the top, then sprinkle with the remaining cheese on top.
  7. Place in oven for about 20 minutes, or until cheese has a nice golden color. Serve with herbs.
