In a saucepan, combine the ingredients for the cheese sauce - leave half of the cheese to powder on top! Let it simmer for a few minutes until the sauce thickens. Add ground nutmeg, if using, and stir well.
Transfer the meat to a large baking dish or several small ones. Pour the sauce over the top, then sprinkle with the remaining cheese on top.
Place in oven for about 20 minutes, or until cheese has a nice golden color. Serve with herbs.
