A light and healthy breakfast can be made with almond flour, coconut oil and the usual pancake ingredients that you can buy at your regular supermarket.

  1. Combine all dry ingredients in a deep bowl.
  2. Add eggs, milk, butter, mix well until smooth.
  3. Preheat a frying pan on the stove, add cooking oil, pour a portion of the dough into the pan using a ladle.
  4. Fry over medium heat for 2-3 minutes, until bubbles appear on top.
  5. Turn the pancake over and fry for about 1 minute, until the pancake is browned.
  6. Serve pancakes with unsweetened yogurt, soft cheese, fresh berries.
