This recipe is one of the Kish Lauren Pie recipes, adapted for the ketogenic diet, filled with healthy vegetables and a rich cheese bacon flavor. The pie filling contains a lot of fresh bell pepper and aromatic spices. It is perfectly acceptable to supplement the filling with cauliflower, broccoli, or a mixture of your favorite spices.

  1. Preheat oven to 180 C.
  2. Cut 6 slices of bacon into cubes and place in a preheated skillet, fry until golden brown, stirring occasionally.
  3. While the bacon is browning, add the almond flour, salt, and oregano to the mixing bowl.
  4. Add 1/4 cup olive oil to the dry ingredients and stir.
  5. Roll the dough into a ball with your hands. Add an additional 1-2 teaspoons of olive oil if needed to get the right consistency.
  6. Lightly oil a one-piece baking dish (rectangular dish 27x17 cm or round dish 25-27 cm in diameter). Place the dough ball in the mold and flatten it by grabbing the sides of the mold.
  7. Place the crust blank in the oven for 20 minutes. During this time, the dough will become dry enough so that the moist filling does not soak the crust.
  8. Remove bacon from heat and transfer to a plate to cool. Blot excess grease with a paper towel.
  9. Dice the green bell pepper, chop the garlic (you need 1 teaspoon of chopped garlic).
  10. Add the bell peppers and garlic to the bacon-lard skillet and fry until soft.
  11. In a convenient bowl, lightly beat 6 chicken eggs together.
  12. Add 1.5 cups of cheddar cheese, sauteed bell peppers with garlic and bacon, bacon fat, 1 tsp. spicy mixture, 0.5 tsp pepper and 0.25 tsp. salt. Stir until smooth.
  13. Pour the filling over the crust and spread evenly.
  14. Place in the oven for 15-20 minutes at the same temperature (180C) until the center of the pie is firm. If desired, you can increase the time by 3-5 minutes to brown the top.
  15. Let the pie cool slightly and cut into portions. The only difficulty in using the one-piece pan is getting the first piece of the pie. The rest of the pieces can be easily removed with a wooden or silicone spatula.
  16. Serve warm or cold. Bon Appetit!
