Again stuffed meat rolls - krucheniki. Kruchenyky belong to Ukrainian cuisine and no wedding is complete without them! The word comes from the verb "twist", ie on the beaten piece of meat put the filling and twist into a small roll. The filling can be completely different, from sweet from dried fruits to spicy, with vegetables, nuts or just cheese. Today I suggest to cook krucheniki with cheese. To avoid banal boredom, I added pine nuts.
You can fantasize and cook the filling you prefer, pre-soak the meat in marinade or soy sauce. Bake rolls in the oven or fry in a pan.

  1. Wash the pork tenderloin well, remove all veins and excess fat. Cut the meat into pieces 3-4 cm thick.
  2. Transfer each piece of meat to a bag (so that there are no splashes), beat on both sides with a kitchen hammer.
  3. Remove the meat from the package, salt on both sides. Sprinkle the beaten meat with dry marjoram on one side.
  4. Put 1 tablespoon of grated cheese (with a slide) and 1 teaspoon (approximately) of pine nuts on the beaten pieces of meat.
  5. Wrap the meat in a roll. Tip: if you are going to bake rolls, just follow the recipe. If you want to fry the rolls in a pan, fasten them with toothpicks, as they untwist when fried and will no longer be as elastic as before. You can use cooking thread (instead of toothpicks). But I do not like it, because after frying you have to release each roll from the thread and it takes a long time.
  6. Transfer the stuffed rolls to a baking tray lined with baking paper (foil) or in a fireproof form greased with vegetable oil. Drizzle a little vegetable oil on top so that the meat rolls do not dry out during baking. Bake krucheniki with cheese and pine nuts in a preheated oven to 180 degrees on medium for about 10-15 minutes or until done.
  7. Serve pork strudels better hot or warm. Any cereal or boiled potatoes will suit the side dish. Decorate a plate with meatballs, garnish and fresh vegetables.
