Layered salad "Lemberg" with mushrooms and meat

Layered salad "Lemberg" with meat and mushrooms is prepared in western Ukraine, it is very satisfying, and also very tasty! If you cook a meat salad on the table, you can no longer cook any meat dishes :).

Ingredients

Directions

  1. Boil potatoes in their skins in salted water. Clean and cool it.
  2. Boil the pork tenderloin in salted water with the addition of bay leaves and peppercorns, cool.
  3. Peel the onion and remove the pickled cucumbers from the jar.
  4. This recipe used king mushrooms, but you can use regular ones.
  5. Cut small onions into thin half rings, and large ones into thin quarter rings. Fry the onion in vegetable oil.
  6. When the onion is slightly golden, it means that it is ready. Move it to a plate.
  7. Cut the mushrooms into slices and fry in the same pan as the onion.
  8. Salt and, if desired, pepper. When the moisture from the mushrooms evaporates and they begin to turn slightly golden, you can turn off the fire.
  9. Move the mushrooms to a separate plate. Cool down.
  10. Grate the potatoes on a coarse grater so that they "fall" to the bottom of the plate in which you will serve the salad - this way the salad will turn out "fluffy".
  11. Salt, pepper and grease with mayonnaise. (Homemade mayonnaise is best for this salad, but if you don't feel like making it, buy full-fat mayonnaise.)
  12. Cut the meat into strips and spread over the potatoes.
  13. Pepper and grease with mayonnaise.
  14. Grate the cucumbers on a fine grater on top of the salad. Distribute.
  15. (More than 4 cucumbers do not need to be added. Pickled cucumbers can be replaced with fresh ones or mixed.)
  16. Spread the onion in a thin layer.
  17. Spread the mushrooms.
  18. (In the classic version of this salad, everything is covered with mayonnaise on top, but I don’t recommend doing this, because, firstly, the mayonnaise on top will be weathered if you prepare the salad in advance, and, secondly, the salad is already juicy enough that the mayonnaise no more need to be added.)
  19. Tighten the prepared meat salad with mushrooms with cling film and leave for 1 hour in the refrigerator.
  20. Chop greens.
  21. Sprinkle salad "Lemberg" with mushrooms and herbs before serving.
  22. Layered salad with meat and mushrooms is ready. Bon appetit!
