  1. Warm milk in a saucepan, add low-fat cottage cheese. Mix thoroughly until serum appears on the surface.
  2. Pour the cheese mass into a sieve (covered with moistened gauze).
  3. We wait until all the whey has drained, then we transfer the cottage cheese to the pan, add the egg, salt to taste and soda. We put the pan on a low heat, stir constantly and wait until the mass becomes viscous and thick.
  4. We shift the cheese mass into a mold, put a load on top (1-1.5 kg). We leave it like this for a couple of hours. Then we remove the load and put the cheese in the refrigerator.
