Today I want to share a recipe for an omelet-souffle, which I have been preparing very often lately. The omelet turns out to be very fluffy and airy, with air bubbles inside.

  1. Separate the whites from the yolks. Beat the whites into a strong foam.
  2. Add salt to the yolks and mix with a whisk.
  3. Stir the whipped whites with the yolks gently from bottom to top.
  4. Pour the mixture into a greased frying pan and cook the omelet over medium heat, covered with a lid, for 10 minutes. Make sure that the bottom of the omelet does not burn. Reduce the heat if it burns.
  5. Fold the omelet in half. We turn to the convex side and, holding with our hand, cook for a couple of minutes.
