We do this both on the outside of the meat slices and inside - in the "pocket". Inside, do it carefully so as not to accidentally split the pieces in half.
  4. After that, put the loin in a bowl with marinade and leave for 1 hour at room temperature.
  5. After an hour you can start cooking dinner. Cut the onion into half rings, fry a little in olive oil, then pepper and salt, add a teaspoon of mustard and thyme on the tip of a knife, and mix well. Continue to sauté for another 1 minute.
  6. Then the resulting fragrant mustard onion is placed inside the pockets of our meat. The edges are sewn with wooden toothpicks.
  7. In a frying pan, heat the vegetable or olive oil almost to a boil and only then put the stuffed slices. Fry the loin over high heat in boiling oil. By the way, it is very good to cook this dish in the yard on the grill.
  8. In parallel, prepare broccoli for garnish. To do this, fry the broccoli for 10 minutes in butter.
  9. Together with the meat or after in boiling oil, saute sliced ​​apples. Passing time - 15-20 seconds on each side.
