A meatloaf made from ground beef, cheese, almond flour and bacon is a great option for a hearty dinner or lunch. The bacon helps the minced meat hold its shape and creates a flavorful crust, while the flour acts as a binder.

  1. Preheat oven to 200 C. Grease a rectangular baking dish with cooking oil.
  2. Dice the onion and celery.
  3. Preheat a skillet over medium heat.
  4. Simmer onions and celery over medium heat for 5 minutes, until soft.
  5. Add the garlic, oregano, and chili powder and cook for another 1-2 minutes for the spices to release their flavor. Remove mixture from heat and let cool slightly.
  6. In a large bowl, combine ground beef, toasted vegetables, cheddar, almond flour, parmesan, eggs, soy sauce and season with salt and pepper.
  7. Place the mixture of minced meat and vegetables in a mold, form a roll that resembles a loaf of bread or a loaf.
  8. Top with bacon slices.
  9. Place the meatloaf dish in the oven for 1 hour, until the bacon is crispy and the beef is cooked through. Check that the bacon is done after 20-30 minutes: if the bacon becomes crispy, cover the dish with foil.
  10. Cut the finished roll into portions and serve. Leftovers can be stored in the refrigerator.
