Melon ice cream

Ingredients

• 600 gr. melon pulp
• 1/2 st. Sahara
• 4 egg yolks
• 2 tbsp lemon juice or a little citric acid
• 500 ml. cream 33%

Directions

1. Cut the melon pulp into pieces, combine with sugar and heat over low heat until the sugar dissolves.
2. Grind with a blender with egg yolks.
3. Stirring constantly, heat the mass in a water bath until thickened.
4. Cool down.
5. Whip the cream until stiff peaks.
6. Add lemon juice, mix. We introduce whipped cream, mix and put in the freezer, stirring from time to time.
7. When serving, decorate the ice cream with grated chocolate, jam or fruit.
