Moroccan salad with carrots and oranges

  1. My carrots, peel and cut into ribbons with a vegetable peeler.
  2. We peel the oranges and divide the slices into slices (this is the pulp itself without shells). This should be done over a bowl of carrots so that the juice drains into the carrot during peeling.
  3. Add orange slices, raisins, toasted pine nuts (or seeds), lemon juice, cumin, salt, mint (to taste) to the carrots and mix everything with olive oil and honey.
