  1. Put the washed mushrooms in a saucepan, cover with cold water and cook for 30 minutes. Remove the finished mushrooms, drain the water.
  2. In another saucepan, bring water to a boil, add salt and diced potatoes.
  3. Heat olive oil in a frying pan and fry finely chopped onions and carrots grated on a coarse grater.
  4. When the potatoes are boiled, add 1 processed cheese, diced, into the water. Cook over low heat for 5 minutes, then add fried vegetables and boiled mushrooms to the pan and season with salt to taste.
  5. Before serving, add the second grated cheese to the soup. As soon as the soup boils, remove from heat, pour into bowls and serve. Bon Appetit!
