  1. Prepare the required ingredients.
  2. Wash and dry the bell peppers and eggplant, the eggplant can be chopped with a knife in several places. Place vegetables in a baking dish or baking sheet and bake in the oven for about 20 minutes at 200 degrees (in a gas oven). Focus on your technique, ovens are different!
  3. Season two eggs with salt, pepper and beat.
  4. Preheat a frying pan, pour vegetable oil over it. Pour the egg mixture into the skillet and fry the omelet for 1-2 minutes on each side. Place the omelet on a plate.
  5. Beat two eggs again, salt and pepper, add a little parsley, washed and chopped beforehand.
  6. Fry the omelet with herbs.
  7. And fry the parsley omelet the third time. Save some parsley for filling and garnish.
  8. Spoon the parsley omelet into a parchment-paper lined dish.
  9. Grate hard cheese on a coarse grater.
  10. Sprinkle the grated cheese over the omelet on the parchment.
  11. Peel the baked peppers and eggplant, remove the seeds from the peppers. Cut vegetables into cubes, add chopped parsley.
  12. Spread half of the vegetable over the cheese omelet.
  13. Cover the vegetables with an omelet without parsley, sprinkle with cheese and top with the vegetables.
  14. Cover again with the parsley omelet and sprinkle with the remaining grated cheese.
  15. Place the dish in the oven, preheated to 200 degrees, for 8-10 minutes, until the cheese melts.
  16. Remove the omelette cake from the oven, remove from the mold and transfer to a platter.
  17. Cut the omelet cake with vegetables and cheese into portions and serve hot, sprinkle with chopped herbs.
