Omelet with eggplant and herbs

A regular omelet can be varied by making an eggplant and herbs omelet.

Ingredients

  1. To prepare an omelet with eggplant and herbs, first wash the eggplant, cut into cubes.
  2. Peel the onion, wash, chop finely.
  3. Heat oil in a frying pan. Lay out the vegetables. Fry over medium heat, stirring occasionally, until soft. Salt (1 pinch).
  4. Mix milk with eggs, shake well.
  5. Add flour, salt, mix until smooth.
  6. Chop the greens.
  7. Add the herbs to the egg mass.
  8. Pour eggplant and onion over the egg mass, distribute evenly. Cover and fry an omelet with eggplant and herbs over low heat until tender (until the mass "grabs").
