Pea, Radish and Feta Salad

Delicate peas, crunchy radishes, cucumber and soft salty cheese - an original play of textures and flavors.

  1. Boil the peas in boiling salted water for 2-3 minutes, immediately discard in a colander and dip in cold water to preserve their color.
  2. Wash the vegetables. Cut the radish and cucumber into thin slices. Chop the dill. Dry the arugula well. Lightly knead feta with a fork.
  3. For dressing, combine butter, powder, lemon juice in a separate cup and beat well with a fork.
  4. Combine radish, cucumber, dill and rucola in a salad bowl. Drizzle with the dressing, stir, add feta and season with ground pepper to taste.
