Salade Périgourdine is a traditional French recipe. Southwest France has always been famous for its first-class ducks and duck guts are used here almost mercilessly everywhere. Smoked duck breast is also added to the dish. We have slightly modified the recipe, replacing duck liver with chicken.

  1. Mix mayonnaise with ketchup, 1 tbsp. l. lemon juice, brandy and salt. Set aside.

  3. Cut the eggs and tomatoes into 4 pieces. Wash the salad, dry it, disassemble into leaves and cut into thin strips. Peel the avocado, cut in half and, after removing the pitted, cut into thin slices. Drizzle with the remaining lemon juice. Mix all ingredients, add dressing.
