Pickled Green Tomatoes with Peppers and Garlic

These pickled green tomatoes with bell peppers, chili and garlic will be a great appetizer on any table. They are perfect for strong drinks or as a salad for barbecue. In addition, such pickled tomatoes are ready for use in a day.

  1. Prepare all the necessary ingredients.
  2. There are substances in green tomatoes that are not safe if raw tomatoes are consumed in large quantities (there are less of them in beginners to sing tomatoes). To get rid of these substances, you can blanch green tomatoes, pour over with boiling water several times or soak in salt water (2 tablespoons of salt per 1 liter of water). If you chose the latter option, then boil the brine, cool slightly and pour hot brine over the tomatoes for 3-4 hours (during this time it is advisable to change the salt water).
  3. Cut each tomato into 4-6 pieces. Place the tomatoes in a pot that won't oxidize.
  4. Cut the hot pepper into rings and add to the tomatoes. Take the amount of pepper depending on your taste.
  5. Peel the bell pepper from seeds and stalk, cut into strips. Add the peppers to the pot with the vegetables.
  6. Peel and grate the garlic on a medium grater, add to the vegetables.
  7. Finely chop the dill and add to the tomatoes and peppers.
  8. Cut the basil into strips and add to the pot.
  9. Chop the parsley too and put it in a bowl.
  10. Pour in sugar and salt.
  11. Pour in vegetable oil and vinegar.
  12. Stir.
  13. Place a plate on top of the salad and set the weight.
  14. Leave the tomatoes overnight at room temperature.
  15. Then transfer the pickled green tomatoes with peppers to a jar (I got a liter jar). Place the jar in the refrigerator and let cool.
  16. Such tomatoes can be stored in the refrigerator for up to three months, depending on the temperature.
