Pina Colada Alcoholic Ice Cream

  1. Cool the cream well in the freezer/refrigerator.
  2. Grind the yolks with sugar and starch. Pour coconut milk.
  3. Cook the resulting cream until thickened. Then cool it.
  4. Remove the pulp from the pineapple, grind in a blender and measure 150 g (it is better to use the puree, it is more concentrated in taste). Place in the refrigerator.
  5. Whip the cream to a soft cream.
  6. Mix the yolks with the pineapple puree, then add the cream.
  7. Freeze in an ice cream maker (30-40 minutes) or in the freezer (overnight).
