  1. Wash and dry the pork shoulder thoroughly. Squeeze the garlic through a press and mix with lemon juice, finely chopped rosemary and pepper. Grate the meat and marinate for 30 minutes.
  2. Then heat the olive or butter in a frying pan and fry the meat on all sides, constantly watering it with the juice and add the wine to the pan. When the meat is browned, remove the pan from the heat and cool the meat. When the meat has cooled, remove the fat.
  3. Remove the core from the melon and peel and cut into small pieces. Put the removed fat in a pan and fold the pieces of melon. Simmer for a few minutes to separate the juice from the melon, then put the pieces of cooked meat in a pan and pour the melon juice. Before serving, pour rum over the meat and set it on fire when the flame goes out. The dish is ready to eat.
