  1. We take white small beans and sort, removing spoiled grains. Next, transfer it to a deep bowl, pour plain water at room temperature and leave in this state for 1.5 - 2 hours.
  2. At the end of the required time, discard the beans in a colander and leave in it for a couple of minutes. Then transfer it to a deep saucepan, fill with purified water so that the liquid was above the level of beans by 10 - 12 centimeters, and put to boil over medium heat. After boiling, cook the beans for 1.5 hours.
  3. Meanwhile, wash the pork neck under cold running water and dry it with paper kitchen towels.
  4. Then transfer the meat to a cutting board and cut off the film, veins, excess fat, as well as small bones that could remain on the pork after cutting the carcass.
  5. Next, cut the neck into cubes the size of 2 - 3 centimeters and transfer them to a deep bowl.
  6. Now remove the upper leaves from the leek and cut off its root, and the garlic cloves are simply peeled.
  7. Then the vegetables are washed, dried with paper towels, alternately spread them on a cutting board and grind.
  8. Cut the onion into rings, half rings or cubes up to 1 cm thick. Finely chop the garlic and spread the slices on separate plates.
  9. When the beans are cooked, discard them in a clean colander, pre-installed in a deep bowl, and leave in it for 10 minutes to drain the remnants of vegetable broth. Do not drain the liquid from the beans - you will still need it!
  10. We do not waste time in vain, we put a frying pan with vegetable oil on a strong fire. After 2 - 3 minutes, dip pieces of pork in hot oil and fry until ruddy crust, stirring with a kitchen spatula. It is better to put meat in a frying pan in small portions so that it does not give juice before the allotted time.
  11. After the pork is browned, add chopped leeks and reduce the heat on the stove to a low level. Cook meat with vegetables for 2-3 minutes, stirring occasionally.
  12. Next, put in a pan beans (without liquid), salt to taste, ground black pepper and tomato paste. Mix all the ingredients until smooth and simmer over medium heat for 8 - 10 minutes or until the pork is fully cooked. From time to time, add the liquid from the beans to the pan so that the meat is not too dry.
  13. 2 - 3 minutes before the end of cooking, add chopped garlic to the dish. After that, cover the pan with a lid, turn off the stove and insist fragrant dish for 3-4 minutes. Next, lay out the pork with beans on plates and serve.
  14. Pork with beans - a fragrant dish enriched with protein. This dish is served hot. It can be served with a salad of fresh vegetables, pickles and fresh bread. If desired, each portion can be seasoned with sour cream, homemade cream or sprinkled with shredded Parmesan cheese. Enjoy delicious and simple food!
