  1. Let's prepare all the ingredients. Boil potatoes in advance until tender. Wash and dry apples, bell peppers, dill and parsley.
  2. Heat the pan well over medium-high heat (on my electric stove 6 out of 9) and fry all the bacon slices in turn on it until golden brown. It is not necessary to use a grill pan.
  3. Place cooked bacon on paper towel to absorb excess oil.
  4. Remove stems and seeds from bell peppers and apples. We cut the potatoes into large cubes, pickled cucumbers, bell peppers and an apple - into small cubes, finely chop the greens and bacon.
  5. Mix all the ingredients together, add salt and black pepper to taste.
  6. Let's prepare the dressing.
  7. For dressing, it is best to take a ripe soft avocado: the pulp of such an avocado will simply mash with a fork to a puree state and mix with the rest of the dressing ingredients. My avocado was not very ripe, so I had to resort to using an immersion blender.
  8. Pulp avocado, sour cream and mayonnaise in a blender until smooth. Dress the salad and mix thoroughly.
  9. Potato salad with bacon and apple turns out to be very satisfying, bright and interesting in taste. If you let the salad brew for one to two hours, then the salad will only taste better.
