Potato salad with fresh vegetables

A very simple and hearty potato salad with fresh vegetables, which is especially delicious with new homemade potatoes. It can be served as an independent salad, or as a side dish for meat or fish (for example, smoked pink salmon).
The cooking time in the recipe header does not include the time required to boil the potatoes, as it will vary depending on whether the potatoes are boiled whole or cut.

  1. Let's prepare all the ingredients. Boil potatoes until tender. Wash and dry the rest of the vegetables and herbs.
  2. I used new potatoes, so I washed them and boiled them in their skins, and then just removed the skin, although you could have left it.
  3. We remove the stem, seeds and partitions from the bell pepper. We cut the tomatoes, bell pepper and cucumber into small cubes, potatoes into medium cubes (potato cubes are a little stuck together, so they look a little larger in the photo than they really are). Finely chop the greens (unfortunately, this time I didn’t have green onions, so I made a salad only with dill and parsley).
  4. Mix all the ingredients together. Add salt and pepper to taste, soy sauce, mustard, mayonnaise / sour cream / natural yogurt of your choice and mix thoroughly.
  5. If you don’t really like mustard, then it’s better to add it a little bit and try it, or you can not add it at all. The combination of mayonnaise and natural yogurt 1:1 is my favorite in this salad.
  6. Potato salad with fresh vegetables tastes better if you let it soak for 15-20 minutes, and then eat it.
