Puffy French omelet with cheese sauce

A very fluffy and tender French omelet literally melts in your mouth, and the cheese sauce gives the dish a special piquancy. Omelet sauce is prepared at will, you can do without it, but here it comes in handy.

  1. If you, like me, want to make a sauce, then you still need: one tomato, a bunch of dill, 50 g of cheese, 30 g of olive oil, 1-2 cloves of garlic and, if necessary, salt.
  2. Put all ingredients for the sauce in a blender and chop.
  3. You will get quite a lot of sauce. You can use it for other dishes as well.
  4. Divide the eggs into whites and yolks.
  5. Add salt to the proteins and beat them until fluffy, stable mass.
  6. Add the yolks one at a time and continue beating. The omelet mass should remain fluffy.
  7. Heat a frying pan over low heat and grease the bottom and sides with butter. Turn on minimum heat.
  8. Spread out the omelette mixture and smooth out. Wait one minute.
  9. Cover the pan with a lid and cook the omelet for 4-5 minutes without opening the lid.
  10. Open the lid and gently run a spatula around the perimeter of the omelet. If somewhere the omelet does not leave the walls of the pan, add a little butter in this place. If everything goes well, turn off the heating.
  11. Gently place the omelet on a plate.
  12. Fold in half.
  13. That's all - a lush omelet is ready. Serve the omelet with cooked cheese sauce.
