Rice with salted cucumbers and herbs

A nutritious dish for the summer menu is rice with salted cucumbers and herbs. Boiled rice, lightly salted cucumbers, green onions and dill are perfectly combined with each other. It turns out a light and original vegetarian salad with a balanced taste.

  2. Rice for this dish should be crumbly. Basmati rice or long-grain parboiled rice, which also comes out fluffy, works well.
  3. We wash the rice, put it on a sieve and let the water drain.
  4. We send the rice to the pan, add some salt.
  5. Pour rice with 150-200 ml of water.
  6. We add 1 tbsp. a spoonful of vegetable oil. Put on maximum heat and bring to a boil.
  7. Reduce the heat to a minimum, cover the pan with a lid and cook the rice for about 10-15 minutes, until soft and the liquid is completely absorbed.
  8. Then transfer the boiled rice to a plate and cool completely.
  9. We're preparing the sauce. To do this, squeeze 1 tbsp from a lemon. a spoonful of juice in a bowl.
  10. Pour in the remaining vegetable oil (1 tablespoon), ground pepper and, if necessary, salt. Do not forget that cucumbers are lightly salted, so it is important not to oversalt.
  11. Mix thoroughly - the sauce is ready.
  12. Dill and onion washed, shaken, finely chopped.
  13. Cut salted cucumbers into small cubes.
  14. In a deep bowl, combine rice, cucumbers, onions and dill.
  15. Add sauce.
  16. We mix.
  17. Rice with salted cucumbers and herbs is ready. We spread it on plates and serve it to the table.
