  1. Salt and pepper the meat, soak in flour. In a large skillet over medium heat, heat the oil. Put half of the meat on it, cook for 1-2 minutes on each side.
  2. Transfer the fried meat to a plate. Do the same with the rest of the meat. Reduce heat, pour onions into the pan, fry for 3 minutes.
  3. Add the broth, place the fried meat in a pan, bring to a boil. Cover and simmer for 4 minutes. Sprinkle with tarragon.
