Roasted tomato and bell pepper salad

Cherry tomato and sweet pepper salad is the perfect addition to meat or a completely independent dish! The highlight of this salad is that the vegetables are lightly fried, which allows them to reveal their taste and aroma to the fullest, supplemented with cilantro, garlic and spicy cumin!

Ingredients

  1. Peel the garlic and cut into slices. In a mortar, combine salt, cumin and garlic.
  2. Grind with a pestle until you get a slurry.
  3. Pour in sunflower or olive oil (2 tablespoons) and mix.
  4. Wash cherry tomatoes and cut in half.
  5. Brush cherry tomatoes with spicy oil.
  6. Heat sunflower oil (1 tablespoon) in a frying pan and fry cherry tomatoes over high heat for 1 minute. Transfer the tomatoes from the skillet to a bowl.
  7. Wash the sweet pepper, cut in half, remove the internal partitions with seeds.
  8. Brush the pepper slices with spicy oil as well.
  9. In the same pan where the tomatoes were fried, sauté the peppers over high heat for about 2 minutes.
  10. Transfer the peppers to the tomatoes.
  11. Remove the zest from half a lemon with a fine grater, and squeeze 1 tbsp. a spoonful of juice.
  12. In a frying pan with oil, where the vegetables were fried, send the remaining oil with garlic and cumin, pour in the lemon juice and heat the mixture for 30 seconds.
  13. Pour prepared dressing over vegetables. Add lemon zest, ground black pepper and red ground pepper.
  14. Wash cilantro, dry and chop.
  15. Transfer the cilantro to the vegetables.
  16. Mix the salad and let it brew in the refrigerator for about 1 hour.
  17. A spicy salad of fried tomatoes and bell peppers can be served.
