Bulgur is a very suitable cereal for making side dishes, as well as salads. For this salad, fried salmon, cucumber, onion and herbs are added to bulgur.

  1. In a large skillet over medium heat, heat 1 teaspoon olive oil. Sprinkle the salmon fillet with 1/4 teaspoon salt and the same amount of pepper. Put the fillet in a preheated pan and cook for about 5-6 minutes on each side. Transfer the fried fillet to a plate and refrigerate for 15 minutes. Crumble the chilled fillet with a fork into medium-sized pieces.
  2. While the fillet is cooling, prepare the bulgur. In a large bowl in which you will prepare the salad with bulgur, pour the grits with 2 cups of boiling water, cover and leave for 25 minutes.
  3. Drain the remaining liquid from the bulgur and leave the grits in a bowl. Add the chopped cucumbers, parsley, mint, onion, lemon juice, remaining olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper to a bowl. Mix everything well, add salmon to the salad with bulgur and mix gently again.
