  2. Prepare flavored dressing. Peel the garlic. Crush with a knife blade, cut into small pieces and transfer to a mortar. Add a pinch of salt.
  3. Grind to a pulp. You can grate the garlic on a fine grater without adding salt.
  4. In a deep bowl, combine lemon juice, olive oil, dried oregano and basil, sugar, ground black pepper, salt, minced garlic.
  5. Mix all ingredients together. Salad dressing is ready.
  6. Peel, wash and dry the carrots. Grate on a Korean carrot grater. Move the carrot shavings to a deep salad bowl.
  7. Cut the pitted olives in half lengthwise. Add to carrots.
  8. Rinse and pat dry the parsley. Remove the stems and finely chop the leaves. Add to the rest of the ingredients.
  9. Cut the feta into small pieces. Mash lightly with a fork to make small pieces. Add cheese to the rest of the ingredients.
  10. Pour in the dressing. Stir gently. Cover the salad bowl with cling film or a lid and refrigerate for 10-15 minutes.
