A salad of cucumbers, boiled eggs, fried young zucchini, corn and greens is a great option for a country menu, when young vegetables can be picked directly from the garden, as well as a lifesaver for those who want to cook something new and unusual using zucchini . The salad turns out juicy, crispy, very fragrant and stands out among other simple recipes with its original taste!

  1. Prepare the necessary ingredients. Rinse young zucchini, cucumber, green onion feathers and dill and pat dry with a paper towel.
  2. Drain liquid from canned corn.
  3. Cut off the edges of the zucchini. Cut the zucchini into medium sized cubes.
  4. Peel and chop the garlic clove.
  5. Heat sunflower oil in a frying pan. Add the zucchini to the skillet and sauté over high heat, stirring occasionally, about 5 minutes. Then salt the zucchini, add the garlic and continue to fry over high heat for a few more minutes, until golden.
  6. Transfer the fried zucchini with garlic from the pan to a plate and leave to cool.
  7. In parallel with frying the zucchini, boil the hard-boiled eggs (within 10 minutes after boiling the water). Cool the eggs in cold water. Then peel off the shell.
  8. Cut the eggs into cubes.
  9. Cut off the edges of the cucumber. Cut the cucumber into small cubes.
  10. Peel the onion and cut into small cubes as much as possible.
  11. Cut green onion feathers into thin rings.
  12. Chop the dill.
  13. In a bowl or deep salad bowl, combine eggs, cucumber, corn, green onions, onions, dill.
  14. Add cooled fried zucchini with garlic.
  15. Season the salad with salt, black pepper and mayonnaise.
  16. Stir.
