Boil the beets, cool and peel. Cut the beets into slices, put in a plate. Drizzle with vegetable oil. Lay out the olives.
Remove the zest from the orange on a grater. Peel orange. Cut the pulp into small cubes. Mix the pulp and zest with sugar, put in a pan and evaporate the mixture by half over low heat.
Peel the herring from the skin and bones and cut the resulting fillet into pieces.
Peel the onion, wash and cut into thin half rings.
Place slices of herring and onion half rings on top of the beets. Drizzle beet and herring salad with orange sauce and garnish with fresh herbs.
