A simple appetizer for any time of the year is a salad of beets, potatoes, carrots, onions and corn.

  1. Wash vegetables and herbs.
  2. Boil potatoes, carrots and beets in their skins until tender.
  3. Potatoes and carrots - 20-25 minutes, beets - 40-45 minutes.
  4. Cool vegetables, peel.
  5. Cut potatoes into cubes.
  6. Cut carrots into cubes.
  7. Boiled beets can be grated on a coarse grater or cut into cubes.
  8. Add drained canned corn to salad.
  9. Peel the onion and finely chop. Chop greens.
  10. Add onion and greens to vegetable salad with corn.
  11. Mix all the ingredients, salt to taste and season the salad with vegetable oil and vinegar.
