Light and hearty chicken breast salad with eggs, onions, pickles and dried apricots is a universal dish for holidays and weekdays. The base of boiled chicken fillet and eggs gives the salad nutrition and satiety, and the combination of pickles, slightly spicy onions and sweet dried apricots gives an interesting taste with sourness and sweet-salty notes.   1. Prepare the items on the list. Wash the dried apricots and pat dry. Peel the onion. To save time, you can boil the chicken fillet and eggs in advance.
  2. Boil 1-1.5 liters of water. Place chicken fillet in boiling water, add 1-2 generous pinches of salt. Bring the water to a boil and boil the fillet over low heat for 5 minutes. After turning off the heat, cover the pan with a lid and leave the fillet in the cooling water for another 25 minutes. Then put the fillet on a plate and cool.
  3. Place the eggs in cold water, bring to a boil and boil hard-boiled (8 minutes over low heat). Then place in ice water and chill.
  4. Pour boiling water over dried apricots and leave for 15 minutes to make it more juicy and soft.
  5. Cut the cooled chicken fillet into cubes and place in a salad bowl.
  6. Peel the eggs, cut into strips or small cubes and add to the chicken fillet.
  7. Cut the pickled cucumbers into cubes or strips slightly smaller than the pieces of chicken fillet. Add the chopped cucumbers to the salad bowl with the rest of the ingredients.
  8. Onion cut into thin half rings or quarters of rings. Rinse the chopped onion with cold water to soften its aroma and taste. Let the water drain. Add onion to salad bowl.
  9. Remove dried apricots from water and pat dry. Cut into thin strips and add to the rest of the ingredients. If desired, separate 1-2 pieces. dried apricots, cut into small cubes and use to decorate the dish.
  10. Add mayonnaise.
  11. Stir the salad, taste and add salt and black pepper to taste.
  12. Salad with chicken, dried apricots, pickles and eggs, ready. Lay the salad in a pile on a serving plate, sprinkle with finely chopped dried apricots and serve. Bon appetit!
