The original salad with fried chicken liver, scrambled eggs, pickled cucumbers and fresh aromatic herbs will surprise you with its unusual taste. We will prepare an omelet for such a salad not ordinary, but cheese, which will give the finished dish interesting notes and a cheesy aftertaste. The salad is easy to prepare. It is very satisfying, so it can easily replace the main dish for lunch.

  1. Prepare the necessary ingredients. Wash and dry greens.
  2. Wash the chicken liver and pat dry with a paper towel. Cut each liver in half.
  3. Heat 30 ml of sunflower oil in a frying pan and lay out the liver. Cover the skillet with a lid and fry the liver over medium heat for about 13 minutes, flipping the pieces from one side to the other a couple of times during this time.
  4. Transfer the fried liver to a bowl, sprinkle with a pinch of salt, cover and leave to cool.
  5. Now prepare the egg and cheese omelet. To do this, break the eggs into a bowl, add salt and black pepper.
  6. Whisk the eggs with a fork.
  7. Grate hard cheese on a coarse grater, put in the egg mixture.
  8. Stir.
  9. Heat the remaining oil in a large skillet and pour in the egg and cheese mixture.
  10. Fry the omelette under the lid over medium heat for 7 minutes. The surface of the finished omelet should grab.
  11. Transfer the finished omelet to a plate and let it cool.
  12. Cut the cooled omelet into squares.
  13. Cut the cooled liver into small pieces as well.
  14. Cut pickled cucumbers into small cubes.
  15. Finely chop the greens (parsley and green onion).
  16. Combine scrambled eggs, liver, cucumbers, greens in a bowl or deep salad bowl.
  17. Dress the salad with mayonnaise and mix.
  18. Salad with chicken liver, pickled cucumbers and egg-cheese pancakes is ready.
  19. This salad can be served immediately after preparation. Bon appetit!
