Salad with Chinese cabbage and olives

A simple, quick salad of fresh vegetables with a light dressing will be a wonderful company for a piece of meat or fish, and will also serve as a good appetizer before serving the main course.

  1. Cut half of Chinese cabbage lengthwise into three parts.
  2. Chop Chinese cabbage into strips and put in a deep salad bowl, in which it will be convenient to mix the salad ingredients.
  3. Peel fresh cucumbers from the bitter peel and also cut into strips. Add cucumbers to cabbage.
  4. Free the sweet pepper from seeds and stalk, cut similar in size to the rest of the strips and place in a bowl with salad.
  5. Cut the pitted and unstuffed olives into halves lengthwise, add to the bowl.
  6. For dressing, combine olive oil and lemon juice in a separate bowl until smooth.
  7. Salt the salad, add black pepper and mix.
  8. If you serve Chinese cabbage salad in portions, pour the dressing into a gravy boat, and put 2-3 tablespoons of salad on a plate. If you put it on the table in a common plate, add dressing to all the ingredients in a salad bowl.
